Earlier I shared a video recipe for pan-fried “less-oil” falafel balls. If you have tried that one and now wish to taste proper deep-fried crispy falafel balls, this is the recipe you need to see.
Actually, if you are looking for a go-to recipe for falafel balls, this is the one. You need to start with dry chickpeas (also called garbanzo beans), wash them with plain water a few times, and then soak them for 12 hours. This should soften up the chickpeas for the next step.
Take a food processor or blender and put the soaked chickpeas in. Then add chopped onion and garlic, chopped coriander (or parsley), salt, pepper, cumin powder, red chili powder, baking soda, all-purpose flour, and lemon juice.
Run the food processor or blender until you obtain a fine but grainy mix. Do not turn it into a paste. Instead, the mix should be such that you can shape it into little balls.
The mix should then be kept in a refrigerator for a couple of hours. After that, take out the mix and shape it into little balls or any other shape you want. Deep fry falafel in hot oil for 5 minutes, or until golden brown on the outside.
Falafel balls can be served with a dip of your choice.
