Chef Ranveer Brar presents classic Dal Makhni in a mesmerizing video in which he talks about this recipe’s origin. According to the chef, Dal Makhni’s story started with three friends from Lahore (Pakistan) – Kundan Lal Jaggi, Thakur Das Maggu, and Kundan Lal Gujral who migrated to Delhi after the partition of India.

They opened a restaurant – the famous Moti Mahal, and one dish they created in that restaurant was Dal Makhni. Today, Dal Makhni is hugely popular and is one of the most ordered items in Indian restaurants all over the world.

Chef Brar has shared some unique tips to make Dal Makhni great, such as how to add garlic juice and how salt should not be added at the beginning of the cooking. And, of course, his recipe calls for the use of massive amounts of butter. To be truthful, Dal Makhni is supposed to contain dairy butter. But that does not mean it can’t be vegan.

A vegan substitute of dairy butter such as cashew butter, olive oil, coconut milk, etc., can do the trick for us. For guidance, we can look for vegan Dal Makhni recipes. Chef Sanjeev Kapoor has shared a recipe to make vegan Dal Makhni with cashew butter that you can see on this page.
