It does not get simpler than this. Grated zucchini mixed with a little refined flour, some seasoning/spices of your choice, shallow fried for a few minutes, and just like that, you have crispy & healthy fritters.
Zucchini is healthy, but you need to know that this snack is fried, because of which it will absorb some oil. There are a few things we can do here. One, do not add any water to the mix. Grated zucchini is already quite moist.
Two, add enough flour to get a firm mixture and leave it for a few minutes for the flour to absorb any extra moisture from the zucchini.
And three, shallow fry on medium heat, and when done, keep the fritters on a paper towel for a couple of minutes to drain out any excess oil.
