When it comes to making vegan cheese at home, there are actually six ways to Sunday. I have shared a recipe on this site for making vegan cheese using cauliflower and another one with potatoes and carrots, and this one uses nuts.
The basic idea of making vegan cheese is to use some starch (tapioca starch is favored), plant-based milk, nutritional yeast for flavor, and something to use as a filler (veggies or nuts, etc.). Once you have all these ready, blend everything and boil until the sauce thickens. That is vegan cheese for us.
Vegan Mozzarella From Cashew Nuts
This is a straightforward and super quick vegan mozzarella cheese recipe from Mary’s Test Kitchen Youtube channel. The recipe works, but I have a concern regarding the amount of fat in this cheese. I would rather make vegan cheese from cauliflower.
Cheese from cashew nuts works best when you are making vegan Parmesan from it. Because then, you will sprinkle just a little of it on a dish.
