You can make vegan mayonnaise at home with a base of light & neutral oil and soy milk. Yes, that is correct. This homemade vegan mayonnaise is going to have only two ingredients – oil and soy milk.

Take care to use a light and neutral tasting oil, and absolutely plain (unflavored) soy milk. Actually, homemade soy milk will be best. As you will see in the video, you need to take one cup of oil and ⅓ cup of soy milk and then blend them using a hand blender. It will take only a few seconds. Then add salt to taste and some fresh lemon/lime juice. Your basic vegan mayonnaise is ready.

Later, you can create your mayo’s special variants from this basic mayo by adding pickles or flavors such as garlic. This video will show you how.

The best thing about this homemade is that it contains only natural ingredients and no chemical preservatives or emulsifiers. However, this can also be a problem if you plan to preserve the mayonnaise for a while. My guess is, it would be better to keep it refrigerated and consume it within 2-3 days.

Still, I am happy to be able to make vegan mayonnaise at home, rather than buying some chemical-heavy variety from a store.
