The thing I liked the best about this video is that I get three recipes instead of one. The vegan kofta, the sauce, and the dip. All three choke-full of healthy ingredients. Another thing special here is that the video is from a celebrity chef’s channel – Jamie Oliver.
The main ingredients of the kofta are zucchini and chickpeas. Toasted cumin and coriander seeds, sautéed ginger and garlic, green coriander, breadcrumbs, and black pepper complete the list. Everything goes into a food processor for making a coarse mix.
Koftas are then shaped and kept in the refrigerator for a while before shallow frying.
The yogurt sauce is made using plant-based yogurt (soy), mint leaves, cucumber, and lemon juice. The dip contains cashew nuts, peanut butter, coconut milk, onion, and garlic, all blended.
The kofta kebab is paired with a wheat tortilla, and the sauce and the dip are added on top. Wow, a great snack is ready to be enjoyed.
