Gujarati handvo is a wholesome snack made from a mix of rice, lentils, and vegetables. The original recipe requires the rice & lentils to be soaked, ground into a batter, and fermented overnight. However, there is a quicker way.

This recipe shows how you can avoid fermenting and instead use a sachet of Eno fruit salt to make the batter fluffy. The recipe is also 100% vegan as it does not use curd. Well, now there is no excuse not to enjoy handvo.

Four types of lentils are used in this recipe – tur, chana, moong, and urad. The fifth main ingredient is rice, which can be any short-grain rice. Avoid fragrant rice such as Basmati.

Soak these five ingredients for 4-5 hours and then grind everything in a mixer-grinder. Add veggies and spices of your choice, mix, and then, in the end, add a sachet of Eno fruit salt with some water. Mix again but gently this time and for a short while only.

Handvo batter is ready to be cooked. In a non-stick pan, sauté green chilies, sesame, and mustard seeds in one tablespoon oil and pour the batter over them, about 1-inch thick.

Cook it for about 5 to 8 minutes. Then, take it out, and again sauté the chilies and the seeds in the pan and put the handvo back in, this time on the other side. Cook for another 5 to 8 minutes. Your delicious and wholesome handvo is ready.

Do not forget to use a lot of vegetables because that makes handvo taste and cook better. This is a great snack, you will love it.
