The chef explains the reasons why medu vada gets spoiled and how we can avoid that.
The primary ingredient in this deep-fried snack is urad dal which needs to be soaked in water for 6 hours. The soaked urad is then ground to a coarse paste using as little water as possible.
Once the paste is ready, some herbs and spices are added, such as cumin seeds, chopped onion, curry leaves, chopped green chili, asafoetida, and salt. To make vada even special, you may add some finely chopped fresh coconut to the paste.
As the chef explains, the main trick is to mix the paste with a hand, so much so that it becomes a bit lighter in color. At that point, the paste is well aerated, which will ensure soft and light medu vada.
Fry in hot oil till golden brown and enjoy with coconut chutney and sambar.
