Aloo Paratha is North India’s most popular and super delicious stuffed flatbread. It is made from a dough of whole wheat flour stuffed with mashed and spiced boiled potatoes. It is easy to make at home and can be part of your breakfast or any other meal of the day.

Usually, aloo paratha is enjoyed with plain yogurt. Since we want to be vegan here, this recipe video includes a vegan accompaniment for the paratha – mint chutney – that can add a zing to your aloo paratha or any other Indian meal.

Mint chutney requires fresh mint leaves (3 parts) and fresh cilantro (one part). You need to add chopped onion, chopped tomato, green chili, and lime juice to spice it up. Grind everything in a food processor or blender.

Stuffed paratha requires whole wheat flour and water for the dough. The dough needs to be soft but not sticky. For the filling, boil potatoes with the skin. Once boiled, remove the skin and mash the potato. It is to be spiced with finely chopped onion, grated ginger, green chili, fresh cilantro, and salt.

To make paratha, take a ball of dough and flatten it a bit. Keep the stuffing in the middle and pull the dough up, sealing the stuffing inside. The stuffed dough ball is then rolled as thin as possible without forcing the stuffing out.

Paratha is baked or fried on a hot griddle until golden and enjoyed with the mint chutney which is used as a dip.
